However, we often think that curry is difficult to cook and that it takes ages to cook. Now, that is a misconception. It can be easy and fun. Not to mention the smell that fills the kitchen.

  1. 1. Heat oil on medium heat in a pot. Add shallots, ginger and curry powder; cook 5 minutes, stirring.
  2. 2. Add squash, coconut milk, tomatoes and 1 teaspoon salt. Cover and simmer for 15 minutes. Uncover; stir in cauliflower. Cook another 15 minutes or until squash and cauliflower are tender, stirring occasionally.
  3. 3. Serve with rice.
