Time to spice things up on the dining table! What is better than curry?
However, we often think that curry is difficult to cook and that it takes ages to cook. Now, that is a misconception. It can be easy and fun. Not to mention the smell that fills the kitchen.
If you think that the ingredients are difficult to get, this recipe lists items that you can get easily from the nearby market or grocery store. Why don’t you try making one at home instead of heading out?

- 1. Heat oil on medium heat in a pot. Add shallots, ginger and curry powder; cook 5 minutes, stirring.
- 2. Add squash, coconut milk, tomatoes and 1 teaspoon salt. Cover and simmer for 15 minutes. Uncover; stir in cauliflower. Cook another 15 minutes or until squash and cauliflower are tender, stirring occasionally.
- 3. Serve with rice.
